Soy Lecithin?
Can anyone give me some insight into what "soy lecithin" actually is? It's in sooo many products and I've attempted to research it, but keep getting conflicting answers. Some resources say it's a natural derivative and others say it starts out in the natural form of soy, but that the process by which it is obtained ends up making it a toxin.(?) Please share any knowledge you might have. Tx!

Lecithin is a term that pertains to the "fatty", gel-like, substance that can be produced by so many things. Soy lecithin is lecithin made from a vegan source, namely soy beans. It is commonly used as an emulsifier. There are two main ways of producing soy lecithin: chemically and mechanically. I cannot say which one compromises the original protein structure more. But either way, I think your main concern is whether or not the item is organic and non-GMO. That will narrow down the list.
From there, I tell people to look for potentially harmful ingredients, like preservatives and colorings, because organic and non-GMO does not necessarily mean "no MSG" or "natural flavoring"; two other additives that tend to cause a lot of problems for people. Another thing to consider is that soy lecithin is added to produce a certain texture and not for any nutritional benefit that I'm aware of, while it does have an impact on blood sugar.
